Cookies
Finally I have found a tasty recepie for cookies without eggs!
These are so good and I'll definitely make them again and maybe add some hazel nuts too.
165 g vegetable shortening or margarine
1/4 tsp salt
75g sugar
4 tbsp golden syrup
2 tsp milk
1 tsp vanilla extract
260g plain flour
1 1/2 tsp bicarbonate of soda
100g dark chocolate
Makes about 35 cookies.
Preheat the oven to 180 degrees C. Make sure the rack is on the middle shelf.
Put first 3 ingredients into a bowl (of standing mixer if your using one). Turn on your electric mixer and mix the ingredients until fluffy.
Add the next three ingredients and continue to mix until thouroughly blended in.
Mix in the last 3 ingredients by hand. If mixture is dry, add enough milk so the dough is moist but not sticky.
Shape dough into teaspoon sized balls and place on a greased cookie sheet. DO NOT flatten dough.
Bake in the oven for 8-10 minutes. Put on cooling rack 1-2 minutes after they come out of the oven. Store in an airtight container for up to 5 days.

Strawberry Dream, monster and Aurora Borealis
The days are dark and cold around here now. I took this picture around 11.30 am today. The light is blue almost all day now and the sun is bearly painting the mountain tops pink... To bad it gets so cold when the air is so bright... The temperature have been around -20 C all week and today it's been -24 C here, and we are starting to get a bit of cabin fever ;)
So Eirin and I desided to bake some cookies :)
Strawberry Dream Cookies
200 g softened butter
1 dl sugar
1 dl potato flour
4 dl flour
Mix the sugar and butter to cream. Stir in the flour. Roll out the dough and cut into ca. 40 pieces. Roll each piece to a ball and press it flat with a little dimple in the middle. Fill the dimple with strawberry jam. Bake at 175 C for ca. 10-12 minutes. Cool off on a cakerack.

Friday Cookies
I've desided that we're going to bake cookies each Friday :) I'm not very domestic when it comes to cooking and baking, so this will be just as much learning for me as for the kids ;) Hoping we'll make some great moments together though!
I know that the biggest "problem" will be to find recepies without eggs due to Endre's allergy... So if you have any, please share!
But then again Endre is not the biggest cookie lover in the house... We made two different kinds of chocolate chip cookies today. And Endre ate two before he desided that they weren't any good *lol* I guess he just ate them because of the chocolate since he's very picky about his food ;)

Advent :: Day two!


Todays envelope had just
"Gingerbread" written inside :)
1 dl water
300 g milk free margarine
1 tabelspoon natron
8-10 dl flour
4 dl sugar
1,5 dl syrup
1-2 teaspoon cinnamon
1-2 teaspoon clove
1-2 teaspoon ginger
Mix water, sugar, margarine, syrup and spices in a saucepan and let it melt. Mix natron with half of the flour. Add in the liquid. Mix to a soft dough adding flour to it's not sticky. Cover it and let it cool. If you have time let it cool over night.
Cut out biscuits and bake at 150 C for about 10 minutes.
Endre and I made the dough while Erlend and Eirin were at school. You just have to get in Christmas mood when the whole house smells of ginger, clove and cinnamon! It's funny, because we call gingerbread for "pepperkake" - iterally, pepper (as in black pepper) biscuits here in Norway. I'm not sure why, because there isn't any pepper in them ;)

Kakemenn
I don't bake much for christmas, but we have to bake "kakemenn". The kids are not hugh fans of christmas cookies, but these soft cookies disappears from the boxes in a hurry ;)
They are also one of few traditional christmas cookies Endre can eat since they are egg free.
4 cups flour
1 cup sugar
1 cup milk
4 tablespoons of butter
2 teaspoons of powdered baking ammonia
cup= teacup or coffee cup ( about 3 dl)
I have used butter without milk and ricemilk.
Mix all the dry ingredients and work in the butter. Add milk and more flour if needed until the dough is unsticky. This is enough to fill about four baking trays.
Roll out to about 5 mm and cut out desired figures. Bake at 200 C in the middel of the oven for about 10 minutes.
Not much can be better than this. Hot tea, cookies still warm from the oven, knitting and the kids playing peacefully with lego :)
(And I try not to think about the pile of dishes in the kitchen...)

7. A week without chocolate is bad.
Since it looks like this challenge has taken it's turn around blogland I'm not going to ahallenge anyone ;)

17.Desember

Vi har laget risboller i dag - nam,nam :) Disse er laget kun med puffet ris, kokesjokolade og delfiafett, så Endre kan også spise dem. Disse blir ganske sprø. Vil man ha de mykere, kan man lage eggedosis og blande i.
We have made "risboller" today. I don't know if there is a english word for "puffet ris", but it is rice that are steamed until they blow up. To make these you melt dark chocolate together with fat (coconut fat) and mix in the "puffet ris". Put in muffin cups and store in a cold place :) They will be crispy, but if you want a softer version, you mix in a cream of egg and sugar.
Jeg har hatt denne lua ferdig lenge, men når lyset ikke er på min side nå i mørketida og det man har strikka er mørke grått er det ikke så enkelt å få tatt gode bilder... Men vi har da prøvd i dag.I've had this hat finished a long to time, but when the light is not on my side and the hat is dark gray it's not easy to take good pictures... But we have tried today.

Jeg likte denne lua så godt på grunn av fellinga i toppen. det synes ikke så godt her da. Poden ville ikke stå i ro ;)

Super Sox Box Swap
I dag kom pakken fra min SSBS venn - Christine :) Mange små gaver nydelig pakket inn!Today I got my SSBS package from Christine :) Many little gifts beautifully wrapped in!
Og se på alt det fine som var inni! - Og dette er bare det som var til meg! Det var gaver til ungene også (se litt lenger ned). En stor pose m&m - samboerns favoritt!, kort og konvolutt pakke med min bokstav H på :), målebånd, nøkkelring, garn , bok og vesker. Jeg er helt målløs!And look at all the great stuff inside! - And this is just the things for me! There was gifts for the kids too (look further down). A big bag of m&m - hubby's favourite!, monogram note cards with my letter H o :), keychain, yarn, a book and bags. I'm speachless!

Denne boka har jeg gått og hatt lyst på lenge! Og tenk så var den i pakken - Christine, du må være tankeleser!! Har bladd litt i den, og det er mange fine sokker i den. Gleder meg til å finne et mønster og strikke et par :)I have wanted this book for a long time! And there it was in my package - Christine, you must be a mindreader!! I have looked a few times in it, and there is a lot of great socks in it. Can't wait to find a nice pattern to try out :)
Og så til det ungene fikk. Eirin fikk Hello Kitty godteri, gjett om hun var fornøyd :)And then for the kids. Eirin got Hello Kitty candy, guess if she was pleased :)
Endre fikk en lekebil og kjeks! En glad gutt. Og det beste av alt - kjeksene var uten melk og egg.Endre got a car and cokies! A happy littleboy. And best of all - the cookies was with out milk and eggs.

Erlend fikk godteri og en ball med lys inni - enda en fornøyd gutt!

Sjokolade kjeks / Chocolate chip cookies
Disse kjeksene er uten melk og egg. Og Endre liker dem kjempegodt :) De kommer fra Orgran. De har også mange andre produkter.
These cookies are milk and egg free. And Endre liked them very much :) They come from Orgran. They have a lot of other products too.
